Baked Brie in Puff Pastry

Baked BrieMy ultimate favourite cheese? It’s brie. I am entirely alone in this sentiment in this house. Although we are all cheese lovers I seem to be the only brie lover. Works fine for me, I don’t have to share. Except I did share with the besties, as I made this for our Christmas dinner appetizer and it was so good. The best part of the 4 course meal, and I got to eat all the leftovers, by myself, the next day for lunch. Not that there was a lot, but still, I was happy sitting eating my cheese, with the Christmas tree lights on and some Christmas tunes playing.

  • 1/2 (17 ounce) package frozen puff pastry, thawed
  • 1 (8 ounce) package brie cheese, round
  • 1/8 cup toasted almond, slices
  • 1/4 cup Fig Preserves, or whatever you have in the house (fig was really good though)
  • crackers
  1. Roll out puff pastry and place brie in the centre. Top with jam and almonds in the middle.
  2. Tuck up ends and fold down.
  3. Bake for 20 minutes at 425 degrees. Remove from oven and serve with crackers.
  4. Eat and enjoy!
