My ultimate favourite cheese? It’s brie. I am entirely alone in this sentiment in this house. Although we are all cheese lovers I seem to be the only brie lover. Works fine for me, I don’t have to share. Except I did share with the besties, as I made this for our Christmas dinner appetizer and it was so good. The best part of the 4 course meal, and I got to eat all the leftovers, by myself, the next day for lunch. Not that there was a lot, but still, I was happy sitting eating my cheese, with the Christmas tree lights on and some Christmas tunes playing.

- 1/2 (17 ounce) package frozen puff pastry, thawed
- 1 (8 ounce) package brie cheese, round
- 1/8 cup toasted almond, slices
- 1/4 cup Fig Preserves, or whatever you have in the house (fig was really good though)
- crackers
- Roll out puff pastry and place brie in the centre. Top with jam and almonds in the middle.
- Tuck up ends and fold down.
- Bake for 20 minutes at 425 degrees. Remove from oven and serve with crackers.
- Eat and enjoy!
